1 box Jiffy Corn Muffin mix
Corn Bread

1 egg
1/3 cup milk
3 Tablespoons Cajun Chow Chow (a savory jalapeno relish)
Melted butter


Mix all ingredients in a mixing bowl until moist (it will be lumpy). Spray an 8"x8" baking pan with oil. Pour batter in pan and bake at 400 for 20 minutes. Poke holes in regular intervals all over the cornbread, then douse with melted butter. Cool, then cut and serve.


Cornbread with a kick! Goes great with one of our chili recipes.
